
The Story
Over the the hills surrounding the brewery, Golden and Bald Eagles are migrating to more favorable climes. We admire them for their unflappable poise and strength. The Golden Eagle is found across the North Hemisphere, and, in particular, the highlands of Scotland. The Golden Eagle has always been held in high regard by the Scots from before they were invaded by the English from the south.

The Beer
The Double Eagle Scotch Ale celebrates the eagles and the Scots with big, bold flavors in a strong ale. Scotch Ales traditionally go through a long boil in the kettle for a caramelization of the wort. We re-created this process by reducing the first 15 gallons of the sweet wort down into a thick caramel. This produces a deep copper to brown in colored brew with ruby highlights.
The At Home Pairing
Rich, fatty beef, roast lamb, and pork are all excellent. In addition, smoked salmon and onion-based dishes are great. Maybe, haggis?
